Brown Sugar Meatloaf
1/2 cup packed brown sugar
1/2 cup ketchup
1 pound of ground beef (you can omit sausage and use only ground beef too)

1/2 pound maple sausage
3/4 cup milk
2 eggs
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1 small onion, chopped
3/4 cup finely crushed saltine cracker crumbs (or bread crumbs)
Preheat oven to 350 degrees F. Lightly grease a bread pan. Press half the brown sugar in the bottom of the prepared loaf pan and spread the half the ketchup over the sugar. Save the other half of both these ingredients to put on the top.In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.Top with ketchup/brown sugar and bake in preheated oven for about 70 minutes or until juices are clear.
***After that time, I usually turn off the oven and let it sit in there while we are setting the table and the oven is cooling down--lets the juices really mix with the meat.

Wow, you've been busy! I am going to have to try out the cream puffs, Steve loves those so we usually will be them as a rare treat. It would be great to be able to just make them myself! And the pumpkin pie cake is one that I remember having growing up; I think I like it better than actual pumpkin pie...
Ugh. Re-reading my comment, it should have said "we usually buy them" since it would be really hard to "usually be them" :)
I got so excited about making all these things that I decided to make them and stock my freezer instead. :) So, win-win. I get lots of pictures now and a freezer full of ready made meals for later when I might not be feeling so ambitious! :)
Yes, pumpkin pie cake is SOOOOO Much better than Pumpkin pie...
We tried this last night and LOVED it! We had baked potatoes with it, but I'd like to try it with rice...preggie fettish? I love trying out your recipes and love that they're so easy to put away...I'll need pleny of freezer meals in a couple of months when I don't want to do anything!
This was great! We had it for dinner a couple of nights ago, made with ground turkey instead of beef and it was so good. I almost regretted the fact that I'm on a diet and had to limit my portion, because I totally would have pigged out! The maple flavor and brown sugar made it so yummy, we will definitely be doing this one again!
